Delicious, my husband loves it.

I made "Nancy's Greek Eggplant Pudding and my husband and I thought it was wonderful. Eggplant being a fairly bland vegetable, the combination of ingredients in this recipe made this a very flavorful dish. We would both recommend this vegetable dish and will be making this again.

Hmm..it seems utterly unfair to mention something as intriguing as "Toasted Indian Pudding" and not provide the recipe. I must hustle off to the bookstore to locate a copy of Tinky's book! Says my 6 yr old sous-chef, "You cannot put pudding or an Indian in the toaster, so what's that about?"
