Menu Ideas for Budget Meals To Ring in New Year

As Seen on the Today Show

by Heather Atwell

DUBLIN, N.H. (December 18, 2008)--Yankee Magazine's food editor, Annie B. Copps, has appeared on Today twice since mid-November during the show's "Managing Today" segment, which offers ways to save money in this tight economy. Follow her suggestions on ways to stretch a dollar and use her recipes to celebrate the new year to its fullest with friends, family and food.

"I like to buy ingredients in bulk when they're in season -- the price is always better, and I can maximize both my creativity and become fully immersed in the products," says Annie. "Most bulk items, such as potatoes and onions, last a long time and don't always need refrigeration. Preparing a large cut of inexpensive meat means many meals that you can freeze."

You can use other inexpensive bulk items, such as peanuts or carrots, as the main ingredients to make gifts or tasty treats. Host a memorable dinner party or family meal and cut costs by planning a menu around less-expensive items. For instance, Annie offers a variety of ways to use three inexpensive products -- pork shoulder, onions, and cabbage -- to extend a budget without sacrificing time together this season.
