Brunch: Treat Mom to a Memorable Morning Meal

Omelet, souffle, pancakes, quiche

Tell Mom to relax! Brew the coffee or tea, add some fresh fruit, put some flowers on the table, and make a memorable morning meal. Here are some menu suggestions.

Banana-Cinnamon Waffles

Quickbreads, Coffee Cakes Recipes

Yield: Makes about 6 waffles.

  • 1-3/4 cups flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 egg whites, beaten
  • 1-1/2 cups skim milk
  • 2/3 cup mashed banana
  • 1/2 cup applesauce

Oil waffle iron, and heat. Combine dry ingredients. In another bowl, combine egg whites, milk, banana, and applesauce. Add dry ingredients to wet, and mix briefly. Cook until golden.

Lemon Ricotta Pancakes

Yield: Makes 12 cakes

  • 1 cup ricotta
  • 2 eggs, beaten
  • 1 cup milk
  • 1 cup flour
  • 1 tablespoon baking powder
  • zest and juice of 1 lemon

Blend all ingredients together. For each pancake, pour about 1/3 cup of mixture onto hot griddle. Once pancake sets, flip to cook other side. Serve warm.

Salsa Omelette

As the owner of the Americus Garden Inn Bed & Breakfast, I am always looking for new and interesting breakfast ideas. This oven omelette is easy to prepare, fluffy, and delicious.

  • 1/2 cup hot chunky salsa
  • 1 cup shredded Jack cheese
  • 1 cup shredded Cheddar cheese
  • 6 eggs
  • 1 8-ounce carton sour cream

Preheat oven to 350 degrees. Pour the salsa into bottom of greased 10-inch quiche dish. Sprinkle cheeses over salsa.

Combine eggs and sour cream in a blender. Blend until smooth. Pour egg mixture over cheeses. Bake, uncovered for 30 to 40 minutes or until set.

Asparagus Souffle

Yield: 4 servings

  • 1/4 cup butter, softened
  • 6 eggs
  • 1 cup small-curd cottage cheese
  • 8 ounces Monterey Jack or cheddar cheese, grated
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 8 spears asparagus, chopped, tips set aside

Preheat oven to 400 degrees. Melt butter and pour into a glass 8-inch-square pan, coating the bottom thoroughly. In a large bowl, beat eggs slightly and stir in the cheeses. Combine flour and baking powder in a separate bowl; add to egg mixture, blending thoroughly. Stir in the asparagus except tips.

Pour mixture into the baking pan, place 2 asparagus tips on each of the four servings, and bake 15 minutes. Reduce oven to 350 degrees; continue baking another 20 minutes. Cut each souffle into four pieces and serve hot.

Avocado Quiche

Yield: 16 (Makes 2 quiches)

  • 1 cup sour cream
  • 3 eggs, beaten
  • 3 cups shredded cheddar cheese
  • 8 scallions, chopped
  • 2 ripe medium-size tomatoes, chopped
  • dash of salt and black pepper to taste
  • 2 ripe avocados, sliced about 1/4-inch thick
  • 2 9-inch deep pie shells

Preheat oven to 375 degrees . Mix sour cream, eggs, and cheese. Stir in scallions, tomatoes, and salt and pepper. Lay avocados on bottom of pie shells. There should be just enough slices to cover the bottom. Pour cheese mixture over avocado slices and spread out evenly. Bake until set, golden, and puffy, about 40 to 45 minutes. Let stand 10 minutes before serving. Top with a spoonful of fresh avocado, tomatoes, and scallions. Add a dollop of sour cream on top.

Low-Sugar Oatmeal Raisin Breakfast Bars

Cookies and Bars Recipes

This is a recipe that was adapted to be made with sugar substitutes. Being a diabetic, I find that this is a treat that satisfies the need for something sweet.

  • Ingredients:
  • 3/4 cup brown sugar substitute (I use Sugar Twin Spoonable)
  • 1/2 cup white sugar substitute (I use Sugar Twin Spoonable)
  • 1/4 cup light butter or margarine
  • 3/4 cup unsweetened applesauce (Mott's)
  • 1 egg, or 2 egg whites
  • 3 tablespoons skim milk
  • 2 teaspoons vanilla
  • 1 1/2 cup white flour (or whole wheat flour)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups uncooked quick oats (I use Quaker brand)
  • 1-2 cups raisins
  • 1-2 cups shredded carrots or chopped apples

Directions:

Heat oven to 350?. Beat sugars and margarine together. Add applesauce, egg, milk and vanilla. In a separate bowl, combine flour, baking soda and cinnamon, then add mixture to wet ingredients. Mix well. Stir in oats, raisins, carrots (or apples). Spread into ungreased 9" x 13" pan. Bake 25-30 minutes.
