Pink Lemonade

Yield: With ice, serves 6.

The tartness of the lemons and sweetness of the berries will determine the amount of sugar for this refreshing sweet-sour drink.

  • Juice of 2 lemons
  • 1 pint strawberries or raspberries
  • 1/2 cup sugar, more or less to taste
  • 5 cups cold water

Strain lemon juice. Mash berries and press through a sieve. Combine lemon and berry juice and stir in sugar to taste. Pour into pitcher with cold water, add plenty of ice, and head for the Piazza.

Rhubarb Punch

Yield: Makes about 2 quarts.

  • 1 pound rhubarb
  • 1 cup water
  • 1 stick cinnamon
  • 1-1/4 cups sugar
  • 1/2 cup lemon juice
  • 1 cup pineapple juice
  • 1 quart water

Wash and trim the rhubarb, and cut into 1/2-inch pieces. Cook in a heavy saucepan with water and cinnamon over moderate heat, covered, for 10 minutes. Strain juices and discard rhubarb. Stir in the sugar. Chill; then add remaining ingredients and serve over ice.

Watermelon Punch

Yield: 12 to 14 servings

  • 6 cups watermelon juice (see note)
  • 2 cups pineapple juice
  • 1 can (12 ounces) frozen raspberry juice blend
  • 1 small can (6 ounces) frozen orange juice concentrate
  • 1/4 cup lemon juice

Combine all ingredients in a large jar or pitcher and chill.

Comments

To make watermelon juice, process small chunks of watermelon, with seeds removed, in a blender or food processor until they turn to liquid. Make more than you need for this punch, freeze the extra in ice-cube trays, and use the watermelon cubes to chill the punch. (You can also use watermelon juice instead of water when preparing frozen lemonade or limeade.)

Citrus Iced Tea

  • 4 cups steeped black tea
  • juice of 3 oranges, about 1 cup
  • juice of 2 lemons, about 1/3 to 1/2 cup
  • Sugar to taste, added when tea is hot; we loved lots!

I love iced tea and the idea of adding the juice of oranges appeals to me but I like iced tea (and coffee) without sugar so I would leave out the sugar AND the lemon. It is good that way. Thank you – Anonymous Review

This is the Iced Tea my mother made over 60 years ago. We lived in NYC so we drank sweet tea. You can vary the amount of sugar to taste. It is refreshing and healthy. In winter she would serve it hot, and sometimes add wine. It is still my favorite iced tea. – Reviewed by Barbara Jaymot

Ginger Fresh Fruit Drink

Yield: Serves 12

A refreshing appetizer for lunch or dinner or increase the amounts and serve as a party punch. --The Rutledge Inn, Fairlee, Vermont

  • 1 teaspoon cut up crystallized ginger
  • 1/4 cup crushed pineapple
  • 1/3 cup orange sections
  • 1/3 cup canned peaches
  • 1/3 cup sugar
  • 1/4 cup lemon juice
  • Ginger ale

Mix ginger, pineapple, orange sections, and peaches in blender until smooth. Combine sugar and lemon juice and add to ginger mixture, stirring until well mixed. At serving time put 2 tablespoons in a 10-ounce glass, fill with chilled ginger ale, and present with straws.
