5 Pear Desserts

Maple-Poached Pears

Fruit Recipes

Yield: Serves 12

  • 6 large pears
  • 2 quarts boiling water
  • 3/4 cup maple syrup
  • 12 ounces French vanilla yogurt
  • 12 sprigs mint
  • nutmeg for garnish

Peel and core the pears and cut them in half. Combine the boiling water and the syrup and poach the pears 20 minutes in the mixture. Remove the pears from the water and drain them. To serve, spoon some of the yogurt onto each of 12 glass plates. Place one pear half, cut side down, on each plate and garnish with a sprig of mint and dust with a little nutmeg.

Yield: Makes 4 servings.

  • 4 ripe Bartlett pears, peeled and cored
  • 2-1/2 cups sugar
  • 2-1/2 cups water
  • 1 teaspoon vanilla extract
  • 4 scoops vanilla ice cream
  • 1 cup chocolate sauce
  • 1/4 cup toasted, slivered almonds

Cut pears in half lengthwise. Put sugar and water into a saucepan and bring to a boil, then reduce heat and simmer 5 minutes. Stir in vanilla, add pears, and simmer another 15 minutes, until pears are tender. Allow pears to cool in the syrup. To serve, place one scoop of ice cream onto each of 4 chilled plates. Arrange 2 pear halves on either side of ice cream, then spoon chocolate sauce over all and top with almonds.

Peachy Pear Crisp

  • 1/2 cup peach preserves
  • 1/4 cup lemon juice
  • 1/4 teaspoon ground ginger
  • 6 pears, peeled, cored, and sliced
  • 1/4 cup flour
  • 1/4 cup oats
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 tablespoon margarine
  • 2 teaspoons milk

Preheat oven to 375 degrees F. In medium saucepan over medium high heat, combine peach preserves, lemon juice, and ground ginger. Cook 3 minutes, or until preserves are melted, stirring constantly. Add pear slices; simmer 5 minutes more.

Meanwhile, in small bowl, combine flour, oats, brown sugar, cinnamon, and salt. With pastry blender or fork, blend in margarine until mixture resembles cornmeal. Add milk; toss to combine.

Pour pear mixture into four 10-inch custard cups. Sprinkle oatmeal topping evenly over surface of pear mixture. Bake crumble 25 to 30 minutes, or until top is lightly browned and bubbling.

Spiced Pear Shortcake

Yield: 6 servings

  • Shortcake biscuits:
  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold, unsalted butter
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • egg wash: 1 egg beaten with 1 tablespoon milk
  • sugar, for sprinkling
  • 3 large pears
  • 3 tablespoons butter
  • 3 tablespoons sugar
  • whipped cream, seasoned with ground ginger

Sift together flour, sugar, baking powder, and salt into a large bowl. Cut in butter until it's the size of split peas. In a separate bowl, whisk together the milk, sour cream, egg, and vanilla. Add wet ingredients to dry and stir briskly just until gathered into a sticky dough. Cover with plastic wrap and let rest for 5 minutes. Take a lump of dough slightly smaller than a tennis ball and roll it between your floured palms to form a smooth ball. Make a total of 6 balls; place them onto a greased baking sheet, brush with egg wash, and sprinkle with sugar. Bake at 425 degrees F for 15 to 20 minutes, or until golden brown. Cool on a rack and use as soon as possible.

Peel, core, and slice pears. Saute in butter, adding sugar when pears begin to soften. Cook just until tender. Spoon fruit over split shortcake biscuits and top with spiced whipped cream.

Stillmeadow Baked Pears

Yield: 8 servings

  • butter for greasing
  • 1/4 cup Brownulated brown sugar
  • 4 red pears
  • 8 pats of butter
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup orange juice
  • 2 cups vanilla yogurt (best at room temperature)
  • 1 kiwifruit
  • 2 bananas
  • 1/2 cup blueberries

Preheat oven to 350 degrees F. Lightly butter a 9x12-inch baking dish. Cover bottom of buttered dish with Brownulated brown sugar.

Leaving skin on, cut pears in half lengthwise, on either side of core. Discard center cores and stems. Place pear halves, cut side down, in sugared dish. Top each pear half with a pat of butter, then sprinkle each with pumpkin ppie spice. Pour orange juice around pears. Bake until pears are soft, 20 to 25 minutes.

Serve pear halves on prepared plate over a dollop of vanilla yogurt. Spoon remaining sauce (in bottom of baking dish) over each pear. Garnish with kiwifruit, bananas, and blueberries.
