Roasted red pepper soup is a big hit at Rubi's Cafe in Great Barrington, Massachusetts, where owner Matthew Rubiner chose it as a refreshing and filling starter for a summer picnic at Tanglewood.

Made the soup for the first time. Added some basil to the blender when mixing tomatoes and peppers. Great summer cool me down.
