Grapefruit Pound Cake

I can't help but reach for the citrus during these long, gray February days. Grapefruit is in season from winter through spring, making it the perfect choice to flavor a winter cake, and remind us that warm summer days will eventually make their way back to New England.
This Glazed Grapefruit Pound Cake is a dreamy choice for those of us that like flavor more than frosting. The bright tang of the citrus perfectly balances the rich, buttery goodness of the pound cake.
You can make yours extra festive by adding a few drops of red food coloring to the glaze before drizzling, or give it a light dusting or powdered sugar just before serving. I made mine extra pretty by placing a wire cooling rack over the cake before sifting.

Seems like this is a good choice as right now we are right in the middle of the Rio Grande Valley in Tx and have plenty of grapefruit trees to chose from. PR
