A Hungry Man's Quiche

Yield: 1 ten-inch deep-dish quiche
Ingredients:
1 10-inch deep-dish pastry crust
3 small potatoes, cooked and mashed
1/4 cup cubed ham (1/4-inch cubes)
2 cups grated cheese
5 eggs
1 cup milk
Instructions:
Preheat oven to 325 degrees.
Place pastry crust in 10-inch dish, crimp edges, and prick bottom in several places. Bake crust for 15 minutes, then remove from oven. Increase oven temperature to 375 degrees. Layer potatoes, ham, and cheese into crust. Beat eggs and milk together and pour into crust. Bake 30 minutes at 375 degrees. Lower heat to 350 degrees and bake for additional 10 minutes.

This is a very tasty dish. I made a low cholesterol version by substituting egg beaters for the eggs.
Made it on the eve of the storm of 2002..Dec. 4…added a few chooped onions to the egg mixture…WOW!

Excellent recipe. Never had a quiche before. I added more ham (1 cup) and about a quarter cup of red onions, red and green bell peppers as an extra bonus. Easy recipe to experiment with to create new tastes.

I made this with cubed potatoes, ham, onion and one packaged frozen spinach. Topped everything with shredded gruyère cheese. Everyone loved it. Made it again the next week, but made it in muffin tins. Cooled after they came out of oven, then bagged them in freezer bags. Now I have an on the go breakfast treat!

Simple and easy to prepare. Good recipe for adding favorite cheese, maybe some crumbled bacon, asparagus tips, etc.
