Yield: Serves 4.
These tasty, tender pancakes will be about 1/4 inch thick when cooked. Serve well buttered with warm maple syrup or, for a change, with shaved maple sugar or whipped cream. For further variation serve rolled around sausage links. –Mirror Lake Inn, Lake Placid, New YorkIngredients:
4 egg yolks, beaten2 tablespoons sugar
1/2 teaspoon salt
2 cups milk
6 tablespoons butter, melted
2 cups flour
2 teaspoons baking powder
4 egg whites, beaten until stiff
Instructions:
Beat together the egg yolks, sugar, salt, milk, melted butter, flour, and baking powder. Fold in the egg whites. Heat and grease a griddle and cook the flapjacks until bubbles appear. Flip and cook the other side.Browse Similar Recipes
