Apple-Raisin Muffins

Yield: Makes 1-1/2 dozen.
Serve warm, with cream cheese or apple butter. –Asa Ransom House, Clarence, New YorkIngredients:
1-1/2 cups unbleached flour1-1/2 cups whole-wheat flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 eggs
3/4 cup sugar
1/2 cup oil
1/2 cup milk
2 cups chunky applesauce
1 cup raisins
Instructions:
Preheat oven to 350°F. In a medium bowl sift the flours, baking powder, cinnamon, and nutmeg. In a separate bowl beat the eggs and sugar until foamy. Add the oil and milk and mix well. Slowly stir the dry ingredients into the wet, mixing only enough to dampen the flour. Add the applesauce and raisins. Pour into greased muffin cups. Bake 18-20 minutes.Browse Similar Recipes
