Applesauce Cookies

Ingredients:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1/2 cup thick applesauce
  • 1-3/4 cups sifted flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon soda
  • 1/2 cup raisins
  • 1 tablespoon grated orange rind

Instructions:

Cream the butter, add the sugar gradually, creaming and beating until light and fluffy. Add the egg and beat. Stir in the applesauce. Sift together the flour, salt, baking powder, soda, and add the orange peel and raisins. Mix all together and drop by teaspoonfuls, 2 inches apart, on a lightly greased cookie sheet. Bake in a 350 degree F oven for 15 minutes.
