Avocado Mousse

Yield: Makes 4 servings.
Ingredients:
1/2 tablespoon powdered gelatin1/4 cup cold water
3/4 cup hot water
2 cups mashed, ripe avocado
1/2 cup heavy cream, whipped
1/2 cup mayonnaise
1-1/2 tablespoons lemon juice
3 tablespoons minced parsley
1/2 teaspoon salt
Instructions:
Soak gelatin in cold water, then dissolve in hot water. Set aside to chill in refrigerator. Mix mashed avocado with whipped cream and other ingredients, and blend well. Fold chilled, thickened gelatin into this mixture, then spoon into a mold and chill until firm, for 30 to 45 minutes.Browse Similar Recipes
