Yield: Makes 8 servings.
Ingredients:
2 pounds any combination of ground beef, pork, or lamb2 onions, chopped
1 pound canned tomatoes
1-1/2 tablespoons sugar
2 tablespoons curry
2 tablespoons vinegar
salt
2 firm bananas, peeled and sliced
1 apple, peeled, cored, and chopped
2 tablespoons apricot jam or 1 can apricots
1/4 cup slivered almonds
1 cup tomato juice, for thinning

Mostly wanted to try this because it’s so much fun to say. Used lean ground beef and pork; apricot preserves instead of jam. Would make this again but leave out the almonds and add the bananas and apples just long enough to heat through. Served over brown rice. Love trying new dinner ideas and this one is worthy of a repeat.
