Baked Apples and Chutney

Yield: Makes 6 servings.

Ingredients:

6 'Granny Smith' or other tart baking apples
3/4 cup mango (or other) chutney
1 pint good-quality vanilla ice cream
cinnamon, to taste

Instructions:

Preheat oven to 400 degrees F. Rinse, core, and cut off the tops of the apples, but leave a bit of the bottom core intact to seal in the chutney. Fill each apple with chutney. Place into a baking pan with 1/2 inch of water. Bake about 45 minutes, until apples are just soft. Remove from oven and let cool. Top with a scoop or two of vanilla ice cream and sprinkle with cinnamon.
