Banana Bread

Yield: 12 to 14 servings
Just like Grandma used to make--because it's her recipe! Enjoy!Ingredients:
1-3/4 cups unsifted flour1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1/2 cup shortening
2 eggs
1 cup mashed ripe bananas
Instructions:
Preheat oven to 350 degrees. Grease a 9x5-inch pan. In a medium bowl mix flour, baking powder, and salt thoroughly. In a separate large bowl, mix sugar, shortening, and eggs until light and fluffy. Mix in bananas.Add dry ingredients to banana mixture; stir just until smooth. Pour into prepared pan.
Bake until firmly set when lightly touched in center top, about 50 to 60 minutes. Cool in pan for 10 minutes, then remove to wire rack.
Additional Notes:
Include 1/2 cup chopped dates and 1/2 cup chopped walnuts to banana mixture for a Date-Nut Banana Bread.Or, add one tablespoon grated orange rind to banana mixture for Orange-Banana Bread.
