Yield: Makes 1 dozen
Orange juice and molasses make these muffins just a little different. –Bayberry Inn, Southampton, New YorkIngredients:
1 egg1/2 cup milk
1/2 cup orange juice
1/4 cup butter or margarine, melted
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
Pinch of nutmeg
1-1/2 cups fresh blueberries
Molasses Topping (recipe follows)
Instructions:
.Preheat oven to 350°F. In a large bowl combine the egg milk, orange juice, and butter. In a second bowl combine the flour, sugar, baking powder, salt, and nutmeg. Add the dry ingredients to the wet ingredients and fold together gently, adding the blueberries after the first few strokes. (Mix only enough to moisten the flour.) Fill 12 greased muffin cups two-thirds full. Prepare the Molasses Topping, sprinkle it on the batter, and press it in gently. Bake 20 minutes.Molasses Topping
Ingredients:
1/4 cup butter1/3 cup sugar
2 tablespoons molasses
1/3 cup flour
