Yield: Makes 1 dozen

Mildly sweet with an appealingly different texture. Vary the berry to find your favorite flavor. --Hawthorne Inn, Concord, Massachusetts

Ingredients:

  • 2 eggs
  • 1/4 cup oil
  • 3/4 cup milk
  • 1/3 cup honey
  • 1 mashed banana
  • 3/4 cup blueberries or raspberries
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 cups flour
  • 3/4 cup almonds

Instructions:

Beat together eggs, oil, milk, honey, banana, and berries. Add salt, baking powder, flour, and almonds, stirring just enough to moisten. Bake in greased muffin tins at 350 degrees F for 20-25 minutes.
