Blueberry Cake Cups For Two
Yield: 2 servings
- 1/4 cup flour
- 1/2 teaspoon baking powder
- dash salt
- 1/4 teaspoon cinnamon (optional)
- 1/4 cup sugar
- 1/4 cup milk
- 1 tablespoon melted oleo
- 1 teaspoon vanilla extract (optional)
- 1 cup blueberries, divided (fresh or frozen)
Instructions:Mix flour, baking powder, salt, and cinnamon in a bowl. Mix sugar, milk, oleo, and vanilla extract in a separate bowl. Add dry mixture to wet mixture and stir until just blended.
Grease two ovenproof coffee mugs or ramekins and fill with 1/2 cup berries. Cover with batter, then top with remaining 1/2 cup of berries.
Bake at 375 degrees for 30 minutes, or until brown on top. Serve warm.
