- 6 quarts popped corn
- 1 cup margarine or butter
- 2 cups packed brown sugar
- 1/2 cup corn syrup
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla
Instructions:Melt margarine (butter) sugar, syrup and salt -- bring to a boil over medium-high heat. Boil moderately for 5 minutes.
Remove from heat - add soda and vanilla. It will foam and double - mix thoroughly. Pour atop popcorn - mix well.
Spread on pans - covered with parchment or a silpat...
Bake at 200 deg for one hour - stir every 15 minutes.
I make my popcorn in a brown paper bag in microwave - then dump in a huge pasta type bowl - gently scooping out popped corn to another bowl - leaving behind all unpopped kernels, and tossing them. There is nothing worse than eating yummy caramel corn and almost breaking a tooth on an upopped kernel.
As you're coating the corn - just turn it, and really - the caramel will get evenly coated...
