You don't have to bake these and they look so pretty on a Christmas cookie tray -- so good!

Ingredients:

  • 8 ounces dried apricots (chop in food processor)
  • 2/3 cup coconut
  • 2/3 cup condensed milk
  • 3/4 cup chopped pecans

Instructions:

Mix dried apricots with coconut. Add condensed milk and chopped pecans. Roll in small balls and then in confectioners sugar and refrigerate.

Additional Notes:

On December 14, 2007, this recipe was prepared by culinary students at Southern New Hampshire University and tasted by a panel of esteemed judges to determine, along with our online poll, the winner of the Yankee Magazine Cookie Primary. The winner? Bill Richardson's Biscochitos!
