Yield: 8 servings
Cake
Ingredients:
2 cups flour2 cups sugar
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons soda
1-1/2 cups oil
4 eggs
1/2 cup chopped nuts (optional)
3 cups grated carrot
Instructions:
In a large bowl, mix together first five ingredients. In a separate bowl mix oil, eggs, nuts, and carrot. Add wet mixture to dry mixture and stir until moistened.Frosting
Ingredients:
8-ounce package cream cheese1/4 cup butter
2 teaspoons vanilla
3/4 cup powdered sugar
Instructions:
Combine ingredients in a bowl and mix well.Bake cake at 350 degrees for 45 minutes. Let cool, then frost.
