Cauliflower Vinaigrette

Yield: Serves 6
A pleasant addition to salad plates. Replace cauliflower with 1 medium bunch broccoli for a change of color. --Center Lovell Inn, Center Lovell, MaineIngredients:
1 medium head cauliflower2 cups white wine vinegar
1 clove garlic, minced
1 tablespoon chopped fresh basil
4 tablespoons olive oil
1 teaspoon chopped chives
1 teaspoon chopped parsley
1/2 teaspoon salt
1/4 teaspoon crushed black pepper
Instructions:
Wash and separate cauliflower into small florets. Cook in boiling salted water for 5 minutes. Drain, place in enamel saucepan with vinegar and garlic, and bring to a boil. Drain immediately, mix with remaining ingredients, cover and let cool, then chill.Browse Similar Recipes
