Chili Corn Bake

- 1 small onion, minced
- 2 tbsp butter or margarine
- 3/4 cups shredded cheddar cheese
- 6 tbsp crushed saltine crackers (12 crackers)
- 1/2 cup half and half
- 2 tbsp canned green chiles, chopped
- 1/2 tsp seasoned salt
- 2 cups frozen corn
Instructions:Saute onion in 1 tablespoon of butter about 5 minutes, stirring frequently.
Mix with 1/2 cup of the cheese, 4 tablespoons of the cracker crumbs, half and half, chiles, seasoned salt and corn. Turn into greased pie plate or shallow 1 quart baking dish.
Mix together remaining cheese and cracker crumbs. Sprinkle on the corn mixture. Dot with remaining butter. Sprinkle with paprika.
Bake 375 degrees for about 30 minutes.
