  • 4 tablespoons butter
  • 3 cups milk
  • 7 tablespoons cocoa, preferably Droste
  • 1/2 cup boiling water
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon vanilla

Melt butter in a small pan, and set aside. In a separate pan, warm milk. Stir cocoa and boiling water together to make a paste, then mix in 3 tablespoons of melted butter. Combine sugar, cornstarch, and salt and add to the warm milk. Add the cocoa-butter mixture and the beaten egg. Cook over medium-low heat, stirring until thickened, 20 to 30 minutes. Don't let mixture boil. Remove from heat and mix in remaining tablespoon of butter and the vanilla.
