Yield: Makes 4 dozen.

This recipe comes from South Dartmouth, Massachusetts.

Ingredients:

  • 1/2 pound cheddar cheese, grated
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon curry powder
  • 2 egg yolks
  • 2 egg whites, beaten stiff
  • 8 strips bacon, fried crisp and crumbled
  • 2 tablespoons hot mango chutney
  • 12 slices firm white bread, crusts removed, lightly toasted, and cut in quarters

Instructions:

Combine cheese, baking powder, curry, and egg yolks. Fold in egg whites. Combine bacon and chutney in separate bowl. Spread cheese mixture on bread and spoon bacon-chutney mixture in center of each piece. Broil about 4 inches from heat until cheese mixture puffs. Serve hot.
