Yield: Makes 12.

Cheese, curry, bacon, and mango chutney create a unique combination of flavors. Serve as an open face sandwich or as a fancy canapé.

Ingredients:

  • 1/2 pound cheddar cheese, grated
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon curry powder
  • 2 egg yolks
  • 2 egg whites, beaten stiff
  • 8 strips bacon, fried crisp and crumbled
  • 4 tablespoons hot mango chutney
  • 12 slices of firm white bread, crusts removed, lightly toasted

Instructions:

Combine cheese, baking powder, curry, and egg yolks. Fold in egg whites. Combine bacon and chutney in separate bowl. Spread cheese mixture thickly on slices of bread and spoon bacon-chutney mixture in center of each slice. Broil about 4 inches from heat until cheese mixture puffs. Serve hot.
