Cranberry Glazed Chicken Breast Quarters

Yield: Serves 6

The glaze is so good, you might want to bake the chicken right in it. --Old Town Lodge, Gassetts, Vermont

Ingredients:

6 chicken breast quarters
Salt and pepper
1 can (8 ounces) jellied cranberry sauce
1/4 cup soy sauce
1/2 cup packed brown sugar
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon ground ginger
1 clove garlic, crushed
2 tablespoons lemon juice

Instructions:

In a broiling pan place chicken breast quarters. Salt and pepper slightly. Cook 1-1/2 hours at 325 degrees F in top of oven. Meanwhile, combine remaining ingredients for glaze; heat to dissolve sugar and liquefy cranberry sauce. Baste chicken with cranberry glaze mixture during last half hour of cooking.
