Yield: 4 sandwiches

No one seems to remember which of the many Dabneys in Boston's Somerset Club was the inventor of this practical and pleasant sandwich. It is ideal, for instance, to take with one on the New Haven Railroad's Yankee Clipper, thereby neatly avoiding the crowd in the diner.

Ingredients:

1-1/2 cups cooked chicken
1/2 cup minced onion
lettuce
salt and pepper
butter
mayonnaise

Instructions:

Combine ingredients (except the lettuce) and spread the mixture between slices of buttered dark or graham bread. Add a crisp leaf of lettuce.
