Do-Ahead Cranberry Relish

Yield: Makes 8 to 10 servings, as a condiment.

Ingredients:

2 cups fresh cranberries
1 small onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons horseradish

Instructions:

Grind cranberries and onion in meat grinder or food processor. Stir in remaining ingredients. Freeze in ice cube tray or plastic container. Defrost when ready to use, whip it with a whisk, and serve.

    This is very similar to one I found on the NPR web page. It is wonderful and will be presented at my Thanksgiving table for many years to come! Enjoy!
