Easy Lemon-Pepper Chicken

Yield: Makes 4 servings.

Ingredients:

1/3 cup fresh lemon juice
1/4 cup virgin olive oil
2 tablespoons cracked black peppercorns
1 tablespoon chopped parsley
1 teaspoon salt
4 boneless chicken breasts, skinned
lemon slices, for garnish

Instructions:

Combine first five ingredients. Pierce chicken breasts with a fork and pour the marinade over them. Allow chicken to marinate in the refrigerator for at least 30 minutes. When ready to cook, broil each breast for 3 to 5 minutes per side, until cooked through. Serve at once, garnished with extra lemon slices.

    Needed a little more cooking time, but the chicken was moist and everyone enjoyed it. It was an easy dinner and will be a keeper.
