Easy Rice Pudding

It's great to keep these ingredients on hand for unexpected company.Ingredients:
1 package instant vanilla pudding1 1/2 cups fat-free half-and-half or regular half-and-half
1 1/2 cups Minute Rice
1 1/2 cups water
1 cup raisins
Garnish: cinnamon; whipped topping (optional)
Instructions:
Prepare pudding according to directions on package, but substitute half-and-half for the milk. In a medium sacuepan, prepare rice with water according to directions. Add the raisins to the rice and cook until rice is fluffy and raisins are plump. Let cool.Add the rice mixture to the pudding. Top with cinnamon and whipped topping (optional).
Note: you can also layer this pudding with thinly sliced, apples cooked with cinnamon and sugar.
