Yield: Serves 4.

Good and simple. --Spruce Point Inn, Boothbay Harbor, Maine

Ingredients:

  • 1 medium onion, minced
  • 1 stick oleo or butter
  • 1 roll Ritz crackers, crumbled
  • 2 tablespoons water
  • 1 pound filet of sole
  • 1 can cream of celery soup
  • 1/2 pint sour cream

Instructions:

Sauté onion in butter and pour over cracker crumbs. Add water to hold mixture together. Spread on filets, roll up, and, pin each with toothpick. Put in baking dish. Cover with cream of celery soup combined with sour cream. Bake at 350 degrees F for 30 minutes.
