Apple Puff

Yield: Serves 4.

Western New York State is noted for its many varieties of apples, which inspired this late breakfast or light dessert dish. Serve with bacon or toast as a special fall treat. —Genesee Country Inn, Mumford, New York

  • 4 tablespoons butter
  • 2 apples, peeled, cored, and thinly sliced
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon grated lemon peel
  • 3 eggs
  • 1-1/4 cups milk
  • 1/3 cup flour
  • 1-1/2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/4 cup confectioners' sugar

Preheat oven to 425° F. Melt the butter in a skillet, then sauté the apple slices with the 3 tablespoons granulated sugar and lemon peel for about 5 minutes or until tender. Turn into a buttered, 9-inch square baking dish. Blend the eggs, milk, flour, 1-1/2 tablespoons granulated sugar, vanilla, and nutmeg and pour mixture over the apples. Bake 10 minutes. Sift the confectioners' sugar over the top. Bake 10 minutes or until the puff is set and golden brown. Serve immediately.
