Apple Rice Breakfast Pudding

Cornmeal, Rice, Grains Recipes

Yield: Serves 4

  • 1 cup cooked rice
  • 1 cup dark brown sugar
  • 3 tablespoons margarine
  • 1 cup unsweetened applesauce
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 1-1/4 tablespoons flour
  • light cream

Preheat oven to 375 degrees F. Combine all the ingredients except the cream. Pour into a shallow pan and bake 20 to 30 minutes. Serve warm with the cream.

Am not the one to add 1 cup of brown sugar to l cup of cooked rice... – Reviewed by Don Keller

I made this recipe and only added 1 beaten egg to the mixture and used unsalted butteri nstead of margarine I also put half a teaspoon of lemon juice in. This is a wonderful breakfast pudding as well as a quick and easy dessert. It's great with lite Cool Whip or even a vanilla yogurt on the side. The best baking time on this here in Texas is about 45 minutes to an hour. It gives it a nice carmelized crust around the edges. – Reviewed by joy rivera
