Apple Walnut Coffee Cake

Yield: 1 cake or 2 small loaves
- Cake batter:
- 2 sticks butter, softened
- 3 eggs
- 1 cup sugar
- 2-1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup applesauce
- 1-1/2 cups apples, peeled, cored, and diced
- 1 cup chopped walnuts
- butter for greasing
- Glaze:
- 1/2 cup powdered sugar
- 1 teaspoon apple or orange juice
In large mixing bowl, beat butter until smooth. Add eggs and beat thoroughly. Then add sugar, and again beat until smooth.
In a separate bowl, combine flour, baking powder, salt, and baking soda. Mix until ingredients are thoroughly combined. Add dry ingredients to butter-egg-sugar mixture, and beat until thoroughly combined. Add the applesauce and beat again.
Fold in apple chunks and walnuts.
Grease and flour a bundt pan, or 2 small loaf pans, and fill. Bake at 350 degrees F for 45 to 50 minutes. Before serving, frost top of cake with glaze.

Very good but recommend adding 1/2 tsp nutmeg & 1 tsp cinnamon or 1 tsp ginger. Also for a healther recipe use 3/4 cup light olive oil in place of the butter. Delicious and good for you!! – Anonymous Review
It did not have the texture of a coffee cake, which I was counting on. It had the consistency of a "bread"-like banana bread. The flavor was a bit bland. I felt it really need some sort of spice. – Anonymous Review
