Apricot Nut Loaf

Bread Recipes | Quickbreads, Coffee Cakes Recipes

Yield: 1 loaf

  • 3 cups flour
  • 3 tablespoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup firmly packed brown sugar
  • 1 cup finely broken walnut meats
  • 1 cup finely cut dried apricots
  • 1 egg, well beaten
  • 1 cup milk
  • 4 tablespoons butter or margarine, melted

Preheat oven to 350 degrees F. In a medium bowl sift the flour once, measure, add the baking powder and salt, and sift again. Add the sugar and mix well. Add the walnut meats and apricots. Combine the egg, milk, and butter or margarine; add to the flour mixture and blend. Bake in a greased 8x4x3-inch loaf pan for 50 to 60 minutes.

Maybe I could have put in a little more liquid, but I doubt that would have changed the essentially pedestrian nature of this loaf. It almost tastes like bread with some fruit and nuts in it, and not very good bread at that. – Reviewed by Paul Winston
