Aunt Amy's Baked Cranberry Pudding

Yield: 6 to 8 servings
Far easier than a traditional steamed pudding, this quick dessert is sure to become a family favorite.
- 2 cups flour
- 1 cup sugar
- 2-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons melted butter
- 2/3 cup milk
- 1 egg
- 1-1/2 cups finely chopped cranberries
- Hot Butter Sauce (optional)
Sift the dry ingredients. Add butter, milk, and egg, and beat for 2 minutes. Stir in the cranberries. Pour mixture into a greased 8-inch square baking pan. Bake at 350 degrees F for 45 minutes or until set in the middle.
Comments
Hot Butter Sauce: To transport the pudding to heavenly heights, melt 1/2 cup butter over low heat. Add 1 cup sugar and 3/4 cup milk or light cream and cook, stirring, over medium heat, until sauce is smooth. Spoon warm sauce over individual servings.
