Avocado Mousse

Yield: Serves 8.
A cool summer salad that looks pretty and tastes terrific.
- 1 package (3 ounces) lime gelatin
- 1 cup boiling water
- 2 cups mashed ripe avocado (3 small)
- 1 small onion, grated
- 1/2 cup mayonnaise
- Juice of 1 small lemon or 1 large lime
- 6 sprigs parsley, finely cut
- 1/2 teaspoon salt
- 3/4 cup sour cream
Dissolve the gelatin in the boiling water and cool until syrupy. Combine remaining ingredients in a blender. Whirl until smooth -- only a few seconds. Add cooled gelatin and blend for a few seconds more. Pour into an oiled mold and refrigerate until firm. Turn out onto a bed of lettuce, and garnish as desired.
