Avocados with Hot Sauce

Yield: Serves 2

  • 1 very ripe, very cold avocado, halved and stoned
  • watercress
  • 2 tablespoons catsup
  • 2 tablespoons butter
  • 2 tablespoons white rum
  • 1 tablespoon brown sugar
  • 2 teaspoons lime juice
  • few dashes of Tabasco sauce
  • fresh ground white pepper

Combine the ingredients for the sauce and bring the sauce to the table bubbling hot, preferably in a metal ramekin. Pour into the cavities of the cold avocado halves and accompany with hot buttered Triscuits. Garnish with watercress. The contrast of the hot with the cold, the piquant with the bland, and the soft with the crisp is very appetizing.
