Meat Recipes

Yield: Makes 8 servings.

  • 2 pounds any combination of ground beef, pork, or lamb
  • 2 onions, chopped
  • 1 pound canned tomatoes
  • 1-1/2 tablespoons sugar
  • 2 tablespoons curry
  • 2 tablespoons vinegar
  • salt
  • 2 firm bananas, peeled and sliced
  • 1 apple, peeled, cored, and chopped
  • 2 tablespoons apricot jam or 1 can apricots
  • 1/4 cup slivered almonds
  • 1 cup tomato juice, for thinning

Brown meat, drain off fat, saute onion, then combine all ingredients and simmer for a half hour. Thin with tomato juice, as needed, and serve over rice. Can be made in a crock pot.

Mostly wanted to try this because it's so much fun to say. Used lean ground beef and pork; apricot preserves instead of jam. Would make this again but leave out the almonds and add the bananas and apples just long enough to heat through. Served over brown rice. Love trying new dinner ideas and this one is worthy of a repeat. – Reviewed by Dias Mara
