Baked Apples and Sausage

Yield: Makes 6 servings.

  • 1 pound bulk sausage
  • 6 tart apples ('Granny Smith' or other baking apple)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon grated lemon rind

Brown the sausage in a skillet. Wash the apples and cut off the tops. Remove the cores and hollow out the apples, leaving just a 1/2-inch thickness. Chop the removed apple flesh and mix with the browned sausage, brown sugar, cinnamon, and lemon rind. Fill the apples with the mixture, place into a baking dish, cover, and bake at 375 degrees F until tender, about 40 minutes.

This is a good, easy recipe and adjusts to varying number of servings. I'm using it for the third time tonight. Granny Smith apples go nicely here. – Reviewed by peg
