Bev's Pickle Relish

Pickles and Preserves Recipes

Yield: 6 pints

I got this recipe from my sister Bev and I want to share her yummy pickle relish with others.

  • 3 quarts ground cucumbers
  • 3 or 4 large onions, ground
  • 2 tablespoons canning salt
  • 3 peppers, red or green, I prefer red ones
  • 3 cups dark vinegar
  • 1 teaspoon alum
  • 4 cups sugar
  • 1 tablespoon salt
  • 1-1/2 teaspoons celery seed
  • 1-1/2 teaspoons mustard seed
  • 1-1/2 teaspoons tumeric

Mix together cucumbers, onions, peppers, and canning salt. Let stand for 1 hour. Drain and squeeze out excess juice. Add remaining ingredients, cook for about 20 minutes and then seal in jars, in pressure cooker, bring up to 5 pounds and shut off heat.
