Blueapple Pie

This Rapture of Delight was invented through Necessity by Alton Weagle, an ingenious Fire Tower Guard on Mt. Monadnock. Finding he lacked apples enough to fill the 9-inch pie he was whipping up for expected company, he gathered blueberries on the mountain and spread them over the apples to the required depth. The resulting creation, served hot from the oven was a huge success. Here is his recipe.

Crust

  • 1-l/2 cups flour
  • 1/2 cup shortening
  • 1/2 teaspoon salt 3 to 5 tablespoons water

Cut the shortening into the flour, and stir in the water to form a soft, but not sticky dough.

Filling

  • sliced apples
  • blueberries (if frozen berries are used, thaw first and drain off the juice)
  • 1/2 to 3/4 cup sugar (3/4 if apples are tart)
  • 1/8 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 tablespoon butter

Place the sliced apples so that they nearly fill a pastry-lined 9-inch pie plate. Add blueberries over the apples to a depth of at least one-half inch. If the apples are a juicy variety, mix a tablespoon of flour with the sugar. Sprinkle the filling with the other ingredients, and dot with the butter. Cover the pie with the top crust or lattice, and bake 20 minutes at 450 degrees F. Lower the heat to 350 degrees F and continue baking for 25 more minutes.
