Bourbon Baked Beans

Yield: 10 to 15 servings
If you'd rather start with the canned variety, try this Kennebunk, Maine, way to doctor them up -- and convince everyone you slaved for hours. These are hearty, flavorful, and perfect for a summer cookout.
- 5 cans (16 ounces each) baked beans
- 1 tablespoon molasses
- 1/4 teaspoon dry mustard
- 1/2 cup chili sauce or ketchup
- 1/2 cup bourbon
- 1/3 cup strong coffee
- 1 can (15 ounces) crushed pineapple, well drained
- 1/2 cup brown sugar
- 8 slices bacon, to garnish
Mix together the beans, molasses, mustard, chili sauce, bourbon, and coffee. Let stand for 3 hours. Preheat the oven to 300 degrees F, then bake the beans for 30 minutes. Add the pineapple and brown sugar and bake for another 30 minutes.
Meanwhile, fry the bacon until crisp. Drain well. Crumble. Serve the beans garnished with the bacon.

Excellent recipe when there is little time to prepare baked beans "the way mom made them". Perfect side dish for outdoor barbecues. Make sure to use B&M baked beans and don't skimp on the bourbon. – Reviewed by Giles Lepage
