Caldeirada a Pescadora (Fisherman's Stew)

Yield: Serves 6-8
- 2 pounds fish (haddock, flounder, halibut, or anything similar)
- 1/2 cup olive oil
- 4 large onions, sliced
- 2 cloves garlic, minced
- 1/2 bunch parsley, chopped
- pepper
- 1 teaspoon coriander seeds, or 2-3 sprigs coriander
- 6 to 8 potatoes, sliced
- large can solid-pack tomatoes
- 1 bay leaf
- salt
- 1 cup dry white wine
Heat the olive oil in a deep pot. Add the sliced onions, garlic, parsley, pepper, and coriander. Cook until the onions are golden. Then place a layer of fish over the onions, then a layer of potatoes, then the tomatoes, bay leaf, salt, and wine. Cover tightly and simmer for about 45 minutes, or until the potatoes are done.
