Campfire Smelt
Fish and Seafood Recipes
Yield: Serves 6
- 3 pounds dressed smelt or other small fish
- 2 teaspoons salt pepper
- 1/3 cup chopped onion
- 1/3 cup chopped parsley
- bacon strips, cut in half
Cut six pieces of heavy duty aluminum foil, 12 x 12". Grease them lightly. Place the fish on the foil and sprinkle with salt and pepper, onion, and parsley. Top with a half strip of bacon. Bring foil over fish and seal edges with double folds. Place on the grill 4 inches from the coals. Cook 10-15 minutes.
