Caraway and Red Cabbage

Yield: Makes 8 servings.
- 1/4 cup (1/2 stick) butter
- 1 red onion, sliced
- 2 teaspoons caraway seeds
- 1 head (about 2 pounds) red cabbage
- 1/4 cup sugar (or less, to taste)
- 1/3 cup red wine vinegar
Melt butter in a large pot and add onion and caraway seeds, sauteing about 3 minutes. Core and slice cabbage, then add to pot and cook until soft, about 5 minutes. Mix sugar in vinegar, and pour over cabbage. Cook about another 5 minutes, or until cabbage is tender.
