Champagne Strawberry Salad

A real Mother's Day treat, this simple, sparkling fruit salad is an alternative to the ubiquitous orange juice-and-champagne Mimosa served at most fancy breakfasts.
- 1 16-ounce container fresh strawberries
- 1-1/2 cups extra-dry champagne (we used Freixenet brand)
- 2 tablespoons sugar (optional)
- 24 ounces nonfat vanilla yogurt (optional)
- Garnish: mint sprigs
Slice strawberries 1/4 inch thick and place in a small bowl. Pour the champagne over the strawberries, covering them, and let them sit 20 to 45 minutes (the longer they sit, the more potent they'll be). Taste strawberries for sweetness; add sugar if desired. Serve plain or over yogurt; garnish with mint sprigs.
