From Yankee Magazine's Great New England Recipes

Bread Recipes

Yield: Makes 2 loaves.

"This is almost like Boston Brown Bread. It's our favorite Saturday night meal with baked beans."

  • 2 teaspoons baking soda
  • 2 tablespoons vinegar
  • 2 cups milk
  • 2 cups graham flour
  • 1 cup soy flour
  • 1/2 teaspoon (sea) salt
  • 1 cup raisins
  • 1/2 cup chopped nuts (preferably walnuts)
  • 3/4 cup molasses
  • 1/2 tablespoon melted shortening or oil

Mix the baking soda and the vinegar separately into the milk. Combine dry ingredients, including the raisins and nuts, and add molasses and shortening. Add the milk mixture to the dry ingredients. Stir until well blended. Pour into 2 well-greased, medium-size loaf pans. Bake at 350 degrees F for 45 minutes or until done. Remove from pans and let cool on rack.
