Yield: Makes 2 dozen

Serve with vegetable soups or stews.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons lard or shortening
  • 1 cup milk
  • 3 tablespoons melted butter
  • 1 to 1-1/2 cups grated cheddar or Swiss cheese
  • Salt and pepper to taste

Preheat oven to 425 degrees. Sift together flour, baking powder, and salt. Blend in lard. Slowly add milk and stir to make a soft dough. Turn onto floured board and knead lightly, several times. Roll out into thin rectangle. Brush dough with melted butter, sprinkle cheese over dough, and season with salt and pepper. Starting at one long side, roll dough up, jelly-roll fashion. With a sharp knife cut into 1-inch slices. Place slices on greased baking sheet and bake 15 minutes or until light brown.
